Stuffed Mushrooms

These tender mushroom caps filled with cheesy, garlicky goodness are the kind of party food that disappears faster than your grandma’s secret fudge recipe.

Ingredients
  

  • 16 large white or cremini mushrooms
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 1/4 cup finely chopped onion
  • 1/3 cup cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs optional
  • 2 tbsp chopped parsley
  • Salt & pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Line baking tray.
  2. Clean mushrooms, remove stems & finely chop stems.
  3. Sauté garlic, onion & chopped stems in olive oil until soft.
  4. Mix sautéed veggies with cream cheese, Parmesan, breadcrumbs, parsley, salt & pepper.
  5. Stuff mushroom caps generously.
  6. Bake 18–20 mins, until tops are golden & bubbly.
  7. Garnish with extra parsley & enjoy warm!
