- 1 English cucumber sliced
- 1 green bell pepper diced
- 1 pint cherry tomatoes halved
- ½ red onion thinly sliced
- ½ cup Kalamata olives halved or whole
- 4 oz block feta cheese cubed or crumbled
- Dressing:
- ⅓ cup red wine vinegar
- Juice of 1 lemon
- 1 tsp Dijon mustard
- 2 garlic cloves minced
- ½ tsp dried oregano
- ¼ tsp kosher salt
- ¼ tsp black pepper
- ½ cup olive oil
Chop all salad ingredients and place in a large bowl.
